Tuna Melt Potato Wedges
This recipe takes the flavours of a tuna melt, and adds them over potato wedges giving a “loaded fries” style weeknight meal which is easy to make and very tasty!
This recipe servers 4 people (or makes great leftovers after serving 2).
Ingredients
- 750g new potatoes
- 4 tablespoons of mayonnaise
- 1 small red onion
- 100 grams of grated cheddar or mozzarella
- 2 cans of tuna steak (ideally in olive oil)
- 1 handful of chopped parsley
- olive oil
Method
- Heat an oven to 200°C
- Chop the potatoes into four wedge shapes each. Toss in a little olive oil, salt and pepper and add to a baking tray.
- Add the potatoes to the oven for approx. 45 minutes until they are cooked through and golden.
- Mix together the mayonnaise, onion, cheese, tuna and parlsey.
- Bunch the cooked wedges together on the tray and top with the tuna mix. This should completely cover the top of the wedges as best you can
- Return to the oven for 10-15 minutes until melty and golden.
