Tuna Melt Potato Wedges

This recipe takes the flavours of a tuna melt, and adds them over potato wedges giving a “loaded fries” style weeknight meal which is easy to make and very tasty!

This recipe servers 4 people (or makes great leftovers after serving 2).

Ingredients

  • 750g new potatoes
  • 4 tablespoons of mayonnaise
  • 1 small red onion
  • 100 grams of grated cheddar or mozzarella
  • 2 cans of tuna steak (ideally in olive oil)
  • 1 handful of chopped parsley
  • olive oil

Method

  1. Heat an oven to 200°C
  2. Chop the potatoes into four wedge shapes each. Toss in a little olive oil, salt and pepper and add to a baking tray.
  3. Add the potatoes to the oven for approx. 45 minutes until they are cooked through and golden.
  4. Mix together the mayonnaise, onion, cheese, tuna and parlsey.
  5. Bunch the cooked wedges together on the tray and top with the tuna mix. This should completely cover the top of the wedges as best you can
  6. Return to the oven for 10-15 minutes until melty and golden.
